Ultimate Vanilla cupcakes

Sweet and buttery…you can finish in a jiffy!
These are the most basic of cupcakes , have a lovely texture and can be modified into myriad glamorous avatars.
The recipe yields 18 cupcakes.

Ingredients:

1 cup( 2 sticks) sweet butter, softened
1 cup superfine sugar
2 cups self rising flour
1 tsp baking powder
4 eggs
1 tsp vanilla extract

Directions:

Preheat the oven to 350 F or 175 C.
Place all the ingredients in a medium bowl, and beat well until smooth and pale.
Spoon the mixture into muffin pan.
Bake for 20 minutes.
Remove the pan from the oven, and cool for 5 minutes.
Remove the cupcakes and cool on a wire rack. Frost or just eat plain!
Store unfrosted cupcakes in an airtight container for upto 3 days.
