Herb Rolls

Here is an easy recipe for making perfect herb rolls. I have been using this recipe for past 20 years, and must say it always yields the softest rolls.

Herb Rolls


2 tablespoons yeast

1 ½ cups warm water

1/3 cup buttermilk

1 tbsp sugar

1 tsp salt

½ cup melted butter

3 cups flour

1 tsp oregano

1½ tsp basil leaves

1 tbsp chopped parsley


In a large bowl, add yeast to approximately 200 ml warm water and let sit for about 30 seconds.

Add melted butter, spices, buttermilk, salt and sugar.

Gradually stir in flour and knead for about 10 minutes. Check the consistency of the flour, if too wet, add some more flour.

Grease a large bowl with a little butter and add dough.

Cover and let rise until double in volume (approximately 45 minutes).

Fold dough over and knead for about 1 minute.

Preheat oven to 190 C (375 F). Grease muffin pans. Divide the dough into 36 small balls of about 1 inch each.

Fill greased muffin pan with 3 balls each, like a cloverleaf pattern.

Cover and let rise for 1 hour. Bake 15 minutes, or until golden brown.

Makes 12 rolls.

These can be served hot with butter, but I like to serve them with Indian Chhole (spicy chickpeas/garbanzo beans). This makes for a complete meal.
