I had my first tryst with this sumptuous pizza in Disneyland and since then have been trying to recreate the flavors in my kitchen. This one is for you dear son!
8 oz pizza dough (Trader Joe’s)
1 pear thinly sliced
2 slices provolone cheese
4 oz grated parmesan
4 oz grated mozzarella
1 ½ cups baby arugula leaves
1 tb sp balsamic vinegar
2 tbsp olive oil
1 onion diced and caramelized in 2 tbsp olive oil (use a wide, thick-bottomed pan, and low heat, for about 2 minutes)
1/2 tsp chilli flakes
Roll the dough. This step tests your patience, so just keep going.
Arrange on a greased pizza pan. Brush the pizza with olive oil, extra dab on the edges.
Arrange the filling starting with provolone cheese, followed by onion, and pears, and again top with the remaining cheese.
Bake 15 minutes at 200 degrees centigrade.
Mix 1 tb sp balsamic vinegar with arugula leaves, and pile in the centre of the pizza. Serve warm
