Apple Cinnamon Cake

 The goodness of apples enhanced by a sprinkling of cinnamon. The cake is wonderfully soft, and a perfect tea-time treat.

Apple Cinnamon Cake

 Ingredients:

1 cup self-raising flour

½ cup plain flour

185 grams butter

2/3 cup caster sugar

3 eggs

1 tsp ground cinnamon

1/3 cup milk (80 ml)

1 apple, peeled, cored and chopped

2 tsp sugar

2 tbsp orange marmalade

Method:

Preheat the oven to 180 degree C or 350 degree F.

Brush an 8 inch round pan with melted butter/oil.

Combine the butter, caster sugar, eggs, flours, cinnamon and milk in a bowl.

Using an electric beater, beat until the mixture is smooth and has changed color ( for about three minutes) .

Spoon the mixture into the tin. Smoothen the surface with a spatula and add the apple pieces. Top with sugar.

Bake for 45 minutes or until a knife inserted in center comes out clean.

Set the cake aside for 5 minutes before turning onto a wire rack to cool.

Heat the marmalade in a small pan and brush over the cake.

It can be served cold with some hot tea or can be served warm with ice cream.
