Banana Muffins

Banana Muffins

Got a couple of ripe bananas in your fruit bowl? Then whip up a batch of melt in the mouth banana muffins.

The muffins are moist and super healthy. Best of all, super easy to make !

Cook time: 15 minutes
Temp: 180 degrees C
8 Servings


1 cup all purpose flour
2 bananas, mashed
1/2 cup sugar
1 egg, slightly beaten
1/4 cup melted butter
1/2 tsp baking soda
1/2 tsp baking powder
1/4 tsp salt


1/4 cup brown sugar
1/2 tbsp flour
1/2 tsp cinnamon powder
1 tablespoon cold butter
1 tbsp ground almonds

Heat the oven to 180 degree C.
Mix the dry ingredients.
Stir in mashed bananas, melted butter and slightly beaten egg.
Add a dash of cinnamon.
Stir until just combined.


Spoon batter into prepared muffin cups, filling cups about 2/3 full.Spread the topping mixture. Bake for 15 minutes or until golden. Set aside in the pan for 10 minutes to cool slightly before transferring to a wire rack to cool completely.

Variations: You can add cocoa powder, chocolate chips or fold in walnuts or almonds.
