Granny’s Mini Bagels

I love my grandson, but  my grandson loves bagels! Sometimes, I think, he loves his bagels more than he loves his granny!

So, like every Saturday, my son walks down to Bruegger’s Bagel to get their best ever baker’s dozen to feed the family! Everyone has their own favorites…ranging from chocolate to classic cheese or onion bagel.
My grandson often asks me, can you make these at home…and not wanting to disappoint him, today I finally had my eureka moment! Well, the recipe did yield , oh , not that great, but pretty satisfactory results! Enough to keep my little angels happy and enough to whet my ex Bostonian daughter’s appetite for a bagel in New Delhi.
I served these with home-made cream cheese!(made with 2 cups of Amul cream, half cup full fat milk and 2 table spoons yogurt…well, it came out pretty well!) and some home-made olive and cranberry tapenade.( Sorry for sounding so boastful!)

Here’s the recipe for you to try, do let me have a feedback about your culinary results, and if you have a well-tried recipe, please do share!



1 cup all purpose flour
1tsp dry, active yeast
1/2 cup lukewarm water
2tsp sugar
1/2 tsp salt
1tsp oil


Take the above ingredients in a bowl, and knead to make a soft dough.
Let it stand for about 10 minutes.
Divide the dough into 6 balls, and roll them like a log and then pinch the two sides together to make a circle.
Cover and let stand for about hour and a half.

In the mean time, take a bowl, add 4 cups water, and 1 tbspoon sugar.
As the water simmers, drop the bagels. let them boil for about 2 minutes on each side.
Remove the bagels with a slotted spoon and place them on a cotton towel,to remove the excess water.
Brush the tops with some olive oil.
Sprinkle with toppings of your choice.I tried chia seeds, flax seeds, minced garlic and onion, minced olives , sesame seeds and zaatar ( soaked in olive oil).If you  like me, have lived in the Middle East for what seems like a life time, it’s difficult to brush off zaatar , sesame  and olive oil  from your repertoire.
Bake at 190 degreec C for about 20 to 25 minutes.
Once the bottoms turn golden, they are ready! remove from the oven and let cool on a wire rack and serve warm!The recipe yields 6 mini sized bagels, well that saves on the slicing part too. Just slather them in some cream cheese and enjoy
your mini bagels!  If you like, you can add some dill or chives  and some black pepper to your cream cheese!
