Berry Berry Mango Muffins

Be adventurous! Eat in muffins loaded with yogurt, flax-seed, fresh berries and mangoes to kick-start your day.


Delicious and very berry mango flavored muffins are easy to make and good to eat.

mango muffin ingredients

1 cup self-raising flour
2 Tbsp castor sugar
1 Tbsp flax seeds
1 egg, lightly beaten
1 cup yogurt
4 Tbsp oil
2 Tbsp milk
1 mango, diced
Handful berry mix (fresh straw berries chopped, raspberries and blue berries)

Preheat oven to 170 °C. Line a muffin pan.
In a bowl, mix the flour, flax seeds and sugar.
In a separate bowl, lightly beat the egg, milk, yogurt and oil.
Stir in the dry ingredients.
When the batter is just wet, fold in gently the mango bits and berries.
Do not over mix as the color will bleed.
Fill muffin liners and bake at 170 °C for 15 -20 minutes.

Cool for 5 minutes.
Remove from pan to a wire rack.

Serve warm.

The recipe makes 8 regular muffins.


Note: You can add some blackberries, white chocolate chips, cinnamon or lemon zest.
You can also top with some oats.
You can also use frozen berries, but remember to rinse.
