Everyone loves a muffin, especially when it has apples and cinnamon.
A scrumptious combination of sugar, spice and all things nice, these muffins are a sheer breakfast delight.
1½ cups self raising flour
¾ tsp cinnamon powder
3/4 cup milk
6 tbsp brown sugar
1/2 cup butter, softened
1 egg, slightly beaten
1 apple, peeled and chopped
1 tbsp orange zest
3 tbsp orange juice
1/4 cup pecans
Preheat the oven to 180 C and line the muffin pan with liners.
Sift the flour with salt and cinnamon.
Whisk butter, orange zest and sugar.
Add the egg.
Add the flour and milk.
Stir in the apple, pecans and orange juice.
Divide the batter between 12 muffin cases.
Sprinkle some icing sugar, cinnamon and pecan bits on top.
Bake at 180 C for about 15 minutes or until risen and golden-brown.
Leave to cool for five minutes in the tin before serving warm or at room temperature.
Using a tea-strainer, dust with the icing sugar when serving to add a nice finish to them.
Makes 12 Muffins
Note: Don’t over-mix or your muffins will be tough.
Variation: You can add oatmeal/cinnamon streusel topping or replace pecan bits with cranberries.
