Marbled Chocona Bread

Well, what’s in a name?

A brunch is not a brunch without banana bread!

Soft and moist banana bread dotted with chocolate chips and chocolate swirls.

1 cup all-purpose flour
2 tbsp granulated sugar
1 tsp baking powder
½ tsp baking soda
Pinch salt
½ tsp cinnamon powder
¼ cup olive oil
¼ cup milk
1 egg
2 bananas, mashed (fully ripe bananas)
½ cup chocolate chips
2 tsp cocoa powder

Preheat the oven to 170 degrees C
Butter a loaf tin.
In a large bowl, mix together the oil and sugar. Beat in the egg. Stir in the mashed bananas and milk.
In another bowl, whisk the flour, cinnamon powder, bicarbonate of soda, baking powder and salt.
Add to the banana mixture, and stir just until moistened.
Add chocolate chips to the batter.
Divide the batter into two parts and to one part add cocoa powder.
Spoon batters alternately; swirl gently with a fork.
Bake for 45 to 50 minutes until a skewer pushed in the center comes out almost, but not quite, dry.
Remove from the oven and leave for about 10 minutes, then turn it out of the tin on to a cooling rack to cool.
Makes 1 loaf.
Slice and enjoy for brunch!
