What a journey! One recipe and myriad avatars!
They all come from the same basic recipe… It basically started off as a simple white chocolate and cranberry studded cookie, then along the way, it was rolled into some Kellog’s cornflakes and changed its nomenclature, and then got a makeover with random whimsical chocolate drizzle atop some!
In between some M&M’s incorporated before this smart cookie yelled S’ More and hopped and jumped in my bowl and gobbled some mini marshmallows, before settling down on my baking sheet.
Cute, chewy bites…
Ingredients for all in one recipe
125 gm unsalted butter, softened (1 stick plus quarter)
¾ cup firmly packed brown sugar or castor sugar
1 tsp vanilla essence
1 ½ cups self-raising flour
½ tsp baking powder
½ tsp baking soda
1 cup cranberries
1 cup milk chocolate chips
1 cup corn flakes
The recipe yields 12 cookies
For Corn flakes Cookies: Additional step: Use 1 cup corn flakes, lightly crushed for coating
Just roll in some M&M’s in the dough, but do not coat with corn flakes.
For S’More cookies: Add 1 cup mini marshmallows, but do not coat with corn flakes
Recipe for Chocolate and Cranberries cookies
Preheat the oven at 180 degrees C.
Sift the flour with baking powder, baking soda and salt.
In a large bowl, cream butter and sugar. Mix in egg and vanilla.
Add the sifted flour.
Mix until combined.
Stir in cranberries, chocolate chips and corn flakes.
Roll about a tablespoonful into a ball and place in the baking tray.
Flatten slightly with a fork.
Bake at 180 degrees C for about 8 to 10 minutes or until edges are lightly golden.
Let cool on the baking sheet for 5 minutes.
Transfer to a wire rack.
Corn flakes Cookies
Roll the dough balls into the crushed corn flakes before baking.
Just roll in some M and M’s in the dough, but do not coat with corn flakes.
Refrigerate the dough for at least fifteen minutes before baking.
Wrap the dough around the mini marshmallows and bake.
1/3 cup marshmallows
1/3 cup chocolate chips
1 tablespoon milk
½ tsp vanilla
Melt in a double boiler over low heat and drizzle over cookies.
The flavor is rich, sweet, chewy and delightful! So glad I made this delectable kaleidoscopic bunch!
