Just the cookies, large and small, round and heart, rolled in sugar…soft and sweet to brighten up the faces around you!
2 cups all-purpose flour
½ cup unsalted butter, room temp
100 g Philadelphia cheese/any cream cheese, softened
1 ½ cups icing sugar/powdered sugar
¾ tsp baking powder
½ tsp vanilla extract
Preheat oven to 180 C
In a bowl whisk together flour and baking powder.
Beat butter and cream cheese in a bowl for about a minute or so.
Add sugar, followed by egg and vanilla.
Beat until fluffy.
Gradually beat in flour and baking powder mix until well blended.
Chill the dough for 30 minutes for drop cookies and 1 hour for cut out cookies.
On a floured surface, roll out dough to 1/8 inch thickness.
Cut with lightly floured desired shape cookie cutters.
Roll cookies in powdered sugar.
Place the cookies onto a parchment lined sheet.
Bake at 180 degrees C for 7 minutes.
Cool for 1 minute on cookie sheet then with a spatula transfer cookies to racks to cool.
Once the cookies have cooled, dust them with some more icing/ powdered sugar.
Variation: Add some raspberries, cranberries or strawberries to the dough.
Note: Just be sure not to overbake the cookies.
