Tomato Soup and Joys of Ayurveda!

My new find…
Thumbing through  Gita Ramesh’s The Ayurvedic Cookbook book is a great pleasure. It has marvelous Ayurvedic recipes for salads, soups and main course. If that is not enough, she goes on to give excellent tips on weight management and healthy living, and  practical tips.
A book beautifully photographed and full of smart advice has reader friendly recipes. Some of its strong points: simple, straightforward instructions; healthy dishes that use wholesome, readily available ingredients.

You can start your ayurvedic journey with wholesome ingredients and fine instructions on making a carrot black currant salad, or spinach and green peas soup for lunch to cabbage thoran as interesting side and red amaranth in green gram curry for dinner, the book is worth a peek to whip up healthy, yet easy and delicious cuisine.
For the next few posts, Gita Ramesh is my culinary inspiration, or should I say kitchen revolution for the moment.

A quick and easy recipe for healthy and tasty tomato soup

Ingredients
6 tomatoes, quartered
1 onion, (½ roughly chopped. ½ finely chopped)
1 green chilli
2 garlic cloves
1 inch stick cinnamon
1 tbsp oil
4-5 curry leaves
¼ tsp black peppercorns
Salt to taste

Directions

Pressure cook the tomatoes with roughly chopped onions, chili, garlic, cinnamon and 2 cups water till 2 whistles.
Cool and blend. Strain the mixture.
Heat oil in a pan, add the finely chopped onion, curry leaves and pour on the soup.
Season with salt and pepper, and adjust to taste,
Serves 2
