These delicious corn muffins with honey flavor are easy to make and just right for a healthy breakfast.
1 cup yellow cornmeal
1 cup all-purpose flour
1 tablespoon baking powder
1/2 cup granulated sugar
1 teaspoon salt
1 cup milk
1/2 stick unsalted butter, melted
1/4 cup honey
Few almonds for garnishing
Preheat oven to 170 degrees C.
In a large bowl, combine the cornmeal, flour, sugar, baking soda and salt. In another bowl, combine the milk, eggs, butter and honey. Stir into dry ingredients just until moistened.
Coat muffin pan with cooking spray.
Evenly divide the batter into the pan about three-fourths full.
Bake for 18 to 20 minutes, until golden.
Cool for 5 minutes before removing from pan to wire rack.
A wholesome delicious snack that pairs perfectly with a cup of coffee.

These muffins can be made sweet or savory.
You can add fresh/frozen blueberries and lemon zest to the batter.
Another good combo is cinnamon and pumpkin puree or cranberries and pecans.

You can improvise by substituting milk with sour cream/yogurt.
