My grandchildren’s delight!
These delicious cookies are really soft on the inside, and super simple to make.
1 cup butter
½ cup granulated sugar
1 cup brown sugar, dark
1 tsp vanilla essence
2 eggs, beaten
2½ cups all-purpose flour
½ tsp kosher salt
1 tsp bicarbonate of soda
1 ½ cups M & M mini baking candies
Cream together butter, vanilla and sugars. Add eggs and beat well.
Stir in sifted dry ingredients.
Add M & M candies. Place the batter in the refrigerator for about half an hour.
Drop from a teaspoon onto a greased/parchment lined cookie tray.
You can also roll the dough into small balls and then after placing them on tray, press down lightly. Arrange a few more M & M candies on top. The more the merrier!
If you place the candies on top and press them down instead of folding in the batter, the cookies look much better.
Bake at 180 degrees C for about 8 to 10 minutes.
Transfer them to a wire rack to cool.
